If you are looking for a special breakfast treat to spoil mum with breakfast in bed this Mother’s Day, consider making Georgia Barnes’ unbelievably fluffy, delicious, and healthy dairy-free banana and oat mylk pancakes. These delicious pancakes are super easy to make with the kids and will show that special mum in your life how much she is appreciated.

 

Dairy Free Banana & Oat Mylk Pancakes
Makes 10 pancakes.



Ingredients:
1.5 cups wholemeal flour
2.5 tsp baking powder
2 tbsp unrefined sugar
0.5 tsp salt flakes
1 large ripe banana, extra slices for serving
2 free range eggs
1 cup Norco Chilled Oat Mylk
1 tsp pure vanilla extract
3 tbsp extra virgin olive oil or melted butter if not DF

Method:
1. Place dry ingredients into a medium bowl and mix well.

  1. Blend together banana, eggs, oat mylk, vanilla and olive oil.
  2. Pour into dry ingredients and stir until just combined.
  3. Allow batter to rest for 5-10 minutes.
  4. Heat a large fry pan over medium heat.
  5. Place large spoonful of the batter and cook until golden brown on both sides and pancakes are fluffy.
  6. Serve with slices of fresh banana, chopped pecans and pure maple syrup.
